My first job in high school was in a local deli. When we made cole slaw, we'd use the deli slicer to shred an entire case of cabbages. We would take turns so nobody got "slicer's elbow". We would then throw the shredded cabbage into a vat of sugared brine and let it marinate in the walk-in fridge.
Whenever we needed to replace the cole slaw in the deli case, we'd get the vat of marinating cabbage out of the fridge and mix it with some shredded carrot and some mayo- not too much.
It's fun to really get your hands in there! I love home made slaw. The variations are endless.
