It's said that the French macaron we know today was invented in the 1830s by Pierre Desfontaines of the French pâtisserie Laduree. It is simple - two merinque discs sandwiched by a layer of buttercream, jam, or ganache.

Cream puffs and all things pate a choux are popular enough in Japan to have spawned an international chain, complete with hilarious logo.
