Spuds

A bowl of fingerling potatoes, oven roasted, rolled in a spicy chili oil. How much simpler can you get?


The bite-sized little spuds were cooked perfectly, the skin just crisped enough to pop as you bit into them, the insides soft and mellow.

Amazing how the humblest of foods can be transcendent. I think it was Craig Clairborne who wrote that onions, if they weren't ubiquitous, would be highly prized.
